Mustard Salmon Dinner from New Paleo Book, Elana’s Pantry!

Afew weeks ago, I reviewed the new book, Paleo Cooking from Elana’s Pantry & offered a Amst_Paleo Cooking from Elanas Pantrygiveaway that now has a winner, kick butt blogger, Chris Lam (Congrats, Chris!). With that post, I featured a gluten-free brownie recipe & have since thought I might have been jumping past dinner straight to that delicious dessert 😉 Another excellent idea you will find in the book is Elana’s mustard salmon fillet:

Mustard Salmon Fillet
Serves 4

1/2 pounds wild salmon fillet

1 cup Dijon mustard

Preheat the oven to 400°F. Rinse the salmon and pat dry. Place the salmon skin side down in a 13 by 9-inch baking dish. Spread the mustard over the salmon. Bake for 15 to 20 minutes, until cooked through, then serve.

Pretty simple, huh? To discover some great side dishes, don’t forget to check out the book! xo

  1. Looks good! I don’t like dijon mustard usually, but I love it when it’s baked or mixed into marinades. Then it turns into magical sauce! 🙂

Saw a photo of this in the book and it looked unappetizing….especially with only mustard on top.

    Has anyone tried it?
