It’s a very warm day, & I am happy that it will be light til at-least after 8pm tonight….this only means one thing: SUMMER has arrived! One of my favorite things about this time of year, especially since you know me & I am always trying to eat healthy, is that all my favorite fruits are in full season. I had a huge bowl of cherries last night for dessert & today for breakfast, oatmeal….but, both with a twist.
Thanks to Lucy’s Cookies offering the blog to try this out, I, with the cherries, also enjoyed afew (ok…maybe more than afew…) of Lucy’s gluten-free chocolate chip cookies & this morning, instead of apples & cinnamon oatmeal, I prepared plain oatmeal with some apple slices & crumbled up Lucy’s Cinnamon Thin cookies. It was absolutely perfect, & what a great way to pair your favorite GF cookies with a meal, no?! 😉
I first discovered Lucy’s Cookies at a really cool little health food store afew years back in Claremont, CA. Not only are they gluten-free, but also free of milk, eggs & nuts. While I have tried Many (yes, with a capital M) GF treats, Lucy’s has remained one of my favorites for their crunchy texture & taste. I also love that Lucy, who is an M.D., began this business for her own child with many severe allergies. She gets it. From both a personal and medical view.
